Brown Sugar Banana Bread

Spelt - Chocolate - Brown Sugar


This take on the classic banana bread is coming to you right from the recipe card box of my mother. And believe me, it is full of crowd-pleasing surprises. For the health gurus, she's replaced bleached, white flour and sugar with spelt flour and brown sugar. For the chocolate lovers, she's replaced walnuts with chocolate chips. And for those of us who just love a good banana bread, she's replaced the dry, bland loaves of the past with a decadent banana bread that stays rich and moist for as long as you can make it last!


Ingredients

1 1/2 cups spelt flour
1 1/2 cups brown sugar, plus 1 tbsp to sprinkle on top of loaf before baking
1 tsp baking soda
1/2 tsp salt
2 eggs
2 ripe, mashed bananas - the browner the better!
1/2 cup vegetable oil
1 tbsp vinegar
1 tsp vanilla extract
3/4 cup chocolate chips

Step 1

Preheat oven to 325°F.

Step 2

In a large bowl combine spelt flour, 1 1/2 cups brown sugar, baking soda and salt.

Step 3

In a second large bowl combine eggs, bananas, vegetable oil, vinegar and vanilla extract.

Step 4

Add wet mixture of Step 2 to the dry mixture of Step 1. Stirring until just combined.

Step 5

Fold in chocolate chips.

Step 6

Pour into a greased loaf pan (9x5x3"). Sprinkle remaining brown sugar evenly across top of banana bread. Bake for 1 hour & 20 minutes.

Step 7

Allow to cool for 5 minutes, and enjoy!


Recipe does not double well.
