While this coveted cookie of France can be difficult to execute properly, they make for the perfect ending to an Easter brunch. Recently, I took a macaron making class at Professor and the Pigeon in Kitsilano, BC. My friends and I loved baking them so much, we tried it on our own the next weekend! This time it was obvious to us - they are a fun treat to make, and beautiful to display, but they are a LOT of work. I'd recommend having at least one partner to help, even better if you can get together a group of friends for an evening of macaron baking!

If you read my introduction you already know, baking macarons will be much easier having a partner to help out. Some of the timing can get very tricky (especially if you plan to make more than one flavour) so there's potential for even the best of us to get mixed up on our own.
