Around the World in Deviled Eggs

Thai - Cajun - Curry - Wasabi

When I think about the deviled egg, it reminds me of a quote from Bridget Jones's Diary...

"My mum, a strange creature from the time when gherkins were still the height of sophistication."

However, with a few simple twists a deviled egg can become a delicious surprise!

Recipes make 16 deviled egg halves.

Thai Peanut Deviled Eggs

Ingredients

8 large eggs
1/2 cup peanut butter (*I prefer natural for flavour, but you may opt for commercial peanut butter for its fluffy texture)
1 tbsp Sriracha sauce
1 tsp each salt & pepper
1/2 cup fresh cilantro

Step 1

Place eggs in a saucepan and cover with water. Bring water to a boil over medium-high heat. Once water is at a rolling boil, cover and remove saucepan from heat. Leave eggs to cook for 10 minutes.

Step 2

Peel eggs under running water and slice each in half.

Step 3

Scoop yolk of each egg half into a mixing bowl and place remaining whites on serving tray.

Step 4

Add peanut butter, Sriracha sauce, salt and pepper to yolks and mix until blended and smooth.

Step 5

Spoon or pipe yolk mixture back into the centre of each egg half. Top each with one or two cilantro leaves and serve!
