African Peanut Soup

Spice - Yam - Peanuts


Recipe serves 4.

Ingredients


2 cups vegetable broth
1 large yam
1 white onion, diced
1 red pepper, diced
1 can coconut milk
2 tbsp Thai peanut satay sauce
1 tbsp Sriracha sauce
2 tsp curry powder
1 tsp fresh ground black pepper
1 cup roasted, salted peanuts

Step 1

In a large saucepan, bring vegetable broth to a boil on high. While waiting for the broth to boil, chop yam into 1" cubes.

Step 2

Add yam to broth, cover and reduce to medium heat. Leave to cook for 15 minutes while preparing all other ingredients.

Step 3

Crush cooked yam into broth until mostly smooth, leaving some small pieces of yam. I just used my stirring spoon for this as the yam gets very soft.

Step 4

Add onion, red pepper, coconut milk, satay sauce, Sriracha, curry powder and black pepper to broth and stir until well mixed. Cover and allow to cook for another 10 minutes.

Step 5

Loosely chop peanuts while soup is cooking.

Step 6

Spoon soup into serving bowls and top each with a quarter of the chopped peanuts (less if you're not a peanut superfan like I am).
