Mushroom Roll-Ups

Cheap - Easy - Cheesy


My grandmother owned a cookbook store in Hamilton, Ontario in the 80's called Cookbooks and Things. While she didn't hold on to more than a few of her 2,000 cookbooks, she recently handed down to me one of the classic, Company's Coming books. This particular appetizer edition contained an hors d'oeuvre recipe that she claimed was everybody's favourite, "but they didn't know it was just white bread!" The best part about this appetizer (besides being full of cheese and mushrooms) is that it is super low-cost, very easy, and you can make them the night before!



Ingredients

1 cup mushrooms (I would stick to button, cremini or portobello)
1/2 cup onion
2 cloves peeled garlic
1/4 cup butter (1/2 of this will go towards Step 2 and the other 1/2 will be saved for Step 9)
1 cup cream cheese
1 tsp Worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
1 loaf white bread

Step 1

Finely chop mushrooms and onion and mince garlic cloves.

Step 2

In a frying pan over medium heat, add half of the butter, mushrooms, onions and garlic. Cook until mushrooms are brown and onions have caramelized, stirring all the while - approximately ten minutes.


Step 3

Add the cream cheese, Worcestershire sauce, salt and pepper to the frying pan mixture, continuing to stir until the cream cheese has melted.

Step 4

Remove from heat and let stand until cool. 

Step 5

Cut crust off the sides of each slice of bread.


I kept mine to feed the ducks!

Step 6

Using a rolling pin, roll each slice on either side as flat as possible.

Step 7

Spread mixture evenly across one side of each flattened slice, leaving about 1/2 a centimetre of bread exposed at one edge of each so the mixture doesn't ooze out when it is rolled.

Step 8

Starting at the edge opposite to the marginally exposed edge, roll each slice of bread into a tube.


Step 9

Melt remaining half of the butter. Place roll-ups on a tray to freeze and cover evenly with the melted butter. Insert tray into a ziploc bag and freeze. (Alternatively, like I did the first time, you can keep the roll-ups in a tupperware container to freeze).

Step 10

When you are ready to serve them, preheat oven to 400°, remove roll-ups from the freezer and allow to thaw partially. Slice each roll-up widthwise into four equal pieces that resemble pinwheels when placed on their sides.

Step 11

Arrange pinwheels on a cookie sheet lined with parchment paper. Bake for 8-12 minutes or until edges are golden brown.


You can even serve them on a toothpick like a miniature lollipop!
