Summer Salad
Quick - Light - Refreshing
This simple salad is perfect to serve at a summer barbecue. It's ready to serve within ten minutes, and is a healthy refresher to brighten up your burger plate!
Ingredients
1 english cucumber
1 package cherry tomatoes
1 avocado
1 can chickpeas
10 finely chopped mint leaves
2 tbsp lime greek yogurt
1/2 lemon
Step 1
Dice cucumber into 1/2" pieces, cut tomatoes in half, and dice avocados into 1/2" pieces. Rinse chickpeas and drain.
Step 2
Add cut vegetables, chickpeas and mint leaves to a large bowl. Scoop in the greek yogurt and stir until completely mixed.
Step 3
Squeeze lemon on top and serve! As a side, serves 10.
