Cilantro White Bean Dip
Garlic - Cilantro - Pine Nuts
There's hardly much that I love more than a recipe where all it takes is throwing all the ingredients in a food processor to get something delicious! Hence, the Cilantro White Bean Dip. Make sure to check out my review of the Taste of Toronto Food Festival for a great alternative to pita bread or crackers for eating with this dip!
Ingredients
1 can white kidney beans
2 cubes (or 2 tsps) chopped cilantro*
2 cloves of garlic, peeled
2 tbsp pine nuts
1 tbsp extra virgin olive oil
1 tsp chia seeds
1 tsp each salt and pepper
*You can use fresh cilantro or buy already chopped cilantro to keep in the freezer. I prefer to buy fresh cilantro, and whatever I don't use I will blend in the food processor with a little bit of oil and pour into a small ice cube tray and freeze.
Step 1
Toast pine nuts in toaster oven on high for 3 minutes, but keep an eye on them because they toast very quickly!
Step 2
Add all ingredients to food processor and blend until smooth. Serve and enjoy!
