Fennel Cabbage Slaw


Fennel - Pine Nuts - Cherries


This slaw is a light, refreshing alternative to some of the classic BBQ sides - Caesar or potato salad. It's a little bit sweet and the fennel-lemon combination packs quite a zing! This recipe is quick and easy, try it with your next summer dinner!

Ingredients

1/2 head green cabbage
1/2 head red cabbage
1 bulb fennel
1/2 cup lightly toasted pine nuts
1/2 cup dried cherries
1/4 cup finely chopped fresh dill
2 tbsp extra virgin olive oil
1 lemon

Step 1

Chop both 1/2 heads of cabbage and add to a large salad bowl.


Step 2

Chop fennel into thin slices and add to salad bowl.


Step 3

Add pine nuts, dried cherries and dill and add to salad bowl. Toss mixture.


Step 4

For the dressing, whisk olive oil with the juice and zest of the lemon. Then add to salad bowl and toss until dressing coats the entire slaw. Enjoy!
