Chipotle Lime Mayo
Spicy - Tangy - Healthy
Ingredients
4 egg yolks - at room temperature
1 tbsp lemon juice
1/2 tsp dried mustard
2/3 cup olive oil
2/3 cup coconut oil
2 chipotle peppers
2 tsp adobo sauce - from the chipotle peppers can
2 tbsp lime juice
Step 1
In a blender, blend egg yolks until smooth. Add lemon juice and mustard and blend until mixed.
Step 2
Slowly add oil while blending at a low speed, starting with olive oil. And by slowly I mean REALLY, REALLY slowly, start with a drop at a time, just making sure that the mixture is fully blended before adding more.
Step 3
Add in chipotle peppers, adobo sauce and lime juice and blend until smooth. Enjoy!
